1977 Dupont Calvados is a tantalising mixture of spice and citrus to taste.
For more than 25 years now, the Estate has resolutely followed a path towards high quality. By drawing on the best techniques used to make cognac and its great blends, Etienne Dupont has studied, tried out and refined his cellar work to reach the same levels of elegance and expressiveness as found in the best wines. In the early '80s Etienne Dupont went to study the double distillation methods used to make Cognac. He was thus able to adapt the golden rules born of a long tradition of excellence.
The calvados is then aged in casks: new oak casks that were only lightly heated for the first three months, where the calvados gains hints of vanilla, then in older casks for long aging, where its flavours intensify and become more complex. The most volatile alcohols evaporate slowly. The calvados progressively approaches its final sipping strength.
The 1977 Dupont calvados is an intense orange mahogany. Clear and brilliant. On the nose it is sweet and not aggressive. A complex calvados. The effects of the wood dominate, with suggestions of spice and citrus. The aromas of calvados left on the sides of the emptied glass reveal a great deal. While to taste there is a fresh attack of spices (nutmeg) and vanilla, with hints of citrus and bitterness.
